Lemonade Salsa

There is no lemonade in lemonade salsa. The name is taken from the saying, "When the world hands you lemons, make lemonade." Yesterday in the garden, we were a little upset because there were a significant number of our tomatoes that had blossom end rot, where the bottom of the tomato begins to rot before it is ripe. We ended up harvesting a lot of the green tomatoes with blemished bottoms (the lemons). When I got home and looked in my harvest basket, I saw jalapenos and green tomatoes and decided to make this delicious salsa (the lemonade). I was going to buy some cilantro to go in it, but we harvested lots of Iraqi basil, which tastes like a combination of basil, mint, and cilantro. I decided to try that instead, and it turned out perfect. It's delicious with tortilla chips, but I'm thinking of how good it would be with fish tacos or that you could easily turn it into a salad with some of the green and yellow wax beans we picked yesterday!

3-4 medium sized green tomatoes, chopped
1/2 medium white onion, chopped
1-2 jalapenos, seeded or not depending on how spicy you like it
1 teaspoon of chopped Iraqi basil or cilantro
1 clove of garlic, minced
juice of 1/2 lemon or lime
big pinch of salt (~1/2 teaspoon)
